This is a breakfast taco for the familia! Cheesy, saucy, filling, and delicioso!
This recipe will serve about 2 people
Here are the ingredients needed:
Salt
Pepper
Garlic cloves or garlic powder ( garlic cloves for more intense flavor with strong aromatics)
Oil of your choice ( I prefer extra virgin olive oil)
1 large potato
1 large avocado
4 eggs
Jar of KIQUES SALSA of your choice
Corn tortillas
Cheese of your choice ( I prefer HABANERO or ghost pepper Jack cheese)
Onion
Cilantro
Here are the steps to an AMAZING breakfast taco!
Grab a small pot for the potato and fill with water
Boil the water
As the water is boiling, chop up your potato into small cubes so they cook faster
Place your chopped potato carefully into the boiling water
This will generall take about 10-15 min before the potato is nice and soft for mashing
Once done, strain the potato to get rid of all the water
In a non stick pan add about 2 tablespoons of oil (on medium-high heat)
Slice up your garlic cloves (if you chose this option) and put into pan
Once garlic is slightly golden place your cooked potato cubes into the pan
Add a pinch of salt and pepper (or to taste) (or add about 2 pinch's of garlic powder if you chose this option)
Place potato mixture to the side
In another nonstick pan add a table spoon of oil and put on medium-high heat
Gently coat your tortilla in the oil from your pan and let it warm up in the pan
Place your cheese under the tortilla to melt
Once the cheese has melted, place 1 egg under the cheesy tortilla to cook
Once the egg has cooked, pull your cheesy egg taco onto a plate
Repeat 3 more times. Steps 13-16
Once all tacos are done add your toppings
Add 1/4 of your sliced avocado per taco, add chopped onion and cilantro to your liking
MOST IMPORTANTLY add a generous amount of KIQUES SALSA
